My grandmother’s Easter cake

Ingredients
- 1 kg of flour
- 2 glasses of milk
- 50 g of living yeast
- 5 eggs
- 200 g of butter
- 1 – 2 glasses of sugar
- teaspoonful of salt
- of vanilla powder
- lemon peel (as desired)
As an option, add to the Easter cake other ingredients
- 150 g of raisins
- 50 g of candied fruit
- 50 g of almond
Dough
Heat milk to 25-30 centigrade, dissolve yeast, add 2 glasses of flour and prepare the liquid dough (brew). Cover the vessel with the brew with wet towel and put it in a warm place for 45-60 minutes. While the brew rises, whip eggs with sugar, salt and vanilla; melt butter and pour it into the whipped mixture. Whip everything once again, add lemon peels, if you want to give your dough yellowish color and aroma of lemon.
Over this period, the brew rises and its volume increases 1.5 – 2 times. When the fermentation of the brew has been finished, add the whipped mixture of eggs and butter, stir adding remaining flour by small portions; knead the dough. The dough should be kneaded until it becomes smooth and does not stick to hands and dishes. After kneading, cover the vessel with dough with wet towel and put it in a warm place to brew for 1.5 – 2 hours. The end of the fermentation process will be recognized in the same way it is done for the brew: the dough will start collapsing. Do not let the dough stay longer, otherwise your pastry will acquire sourish taste.
When the dough has risen increasing its volume twice, add following ingredients as desired: raisins (washed and dried), candied fruit (diced), almond (peeled and minced). Mix everything with the dough. Put the dough in preheated molds filling each mold by 1/3 of its height.
The molds should be prepared as follows: cover the bottom with baking paper smeared with oil on both sides, cover the flanks of the mold with oil and dredge them with crushed dry bread.
Muffle the filled molds with towels and put them in warm place to rise. When the dough has risen by ¾ of the mold height, cover the top of the cake with whipped eggs or oil and put the mold in the oven (warming drawer) for 50-60 minutes.
